Borraggine dumplings
Instructions
Clean, wash and boil the borraggine.
Squeeze it well and let it stand for 5 minutes in olive oil with 1 clove of garlic.
Remove the garlic, pass borraggine to the mill with Mint, combine the eggs, flour, cheese and bread crumbs just to get a consistent dough.
Season with salt and pepper and form balls the size of walnuts.
Flour and boil for 10 minutes.
Drizzle with melted butter and Sage and sprinkling of Parmesan cheese.

- 600 g of borraggine
- 10 leaves of mint
- 20 g of flour
- Breadcrumbs
- 2 tablespoons of olive oil
- 2 eggs
- 50 g of butter
- 2 tablespoons of grated parmesan cheese
- 4 leaves sage
- 1 clove of garlic
- Salt
- Pepper
