Pumpkin dumplings (2)
Instructions
This is a typical winter recipe, a bit long and difficult but worth it.
Take a pumpkin about 30 x 10 cm.
, affettatela and remove the seeds.
Let it boil in pressure cooker for 15 minutes, preferably steam, remove the skin, move with the Mashers and allow it to cool.
When the pumpkin has cooled, add salt and pepper, 4 eggs, 4 tablespoons of flour (about, for 4 people).
The amount of flour must be found by trial and error by dropping a spoonful of batter in a bowl with a little water: if it remains whole and doesn't dissolve means that the flour is fine, otherwise add yet.
The difficulty of the recipe is all in order to get a batter of the right consistency so that entire during cooking.
Put in the meantime to boil a pot of water with salt and when bubbles make the dumplings of batter with a spoon to discard at a time, being careful not to put too much otherwise they stick together.
When the dumplings are cooked are afloat on their own.
Remove them with a slotted spoon, put them in a bowl and sprinkle them with plenty of melted butter, parmesan and poppy seeds, absolutely essential.
