Roast veal in milk (2)
Instructions
Tie the veal nut with the kitchen Twine to keep in shape during cooking; pounded in a mortar the juniper berries.
Melt the butter in a saucepan, add the crushed juniper berries and meat, and Brown on all sides in medium flame for 10 minutes.
Add a pinch of salt and bay leaf; squirt with marsala wine and allow to evaporate almost completely.
Then pour the boiling milk wire, cover and cook for about an hour, at low heat, turning often the piece of meat.
When cooked slice the meat with a sharp knife and arrange the slices on a serving platter.
Let thicken the cooking high-flame; pour it over the meat slices and serve.

- 2 leaves of laurel
- 2 juniper berries
- 50 cl of milk
- 1/2 cup of top dry marsala wine
- 40 g of butter
- Salt
