Cheated of artichokes
Instructions
Clean the artichokes by removing the hard parts, tips and hair inside.
Cut them into thin wedges and keep them in water acidulated with lemon juice.
In a large Nonstick Skillet, heat oil and Brown the artichokes, salandoli.
When they are golden, add the butter, beaten eggs with two pinches of salt, grated cheese, milk and add salt and pepper.
Stir quickly, then cook until eggs have curdled and it consists of a soft and stringy dough: the cheated is ready.

- 8 artichokes
- 2 eggs
- 2 tablespoons of grated parmesan cheese
- 50 g of butter
- 2 tablespoons of olive oil
- 4 tablespoons of milk
- 1 lemon
