Choose tender Endive heads and rather small.
Open them to rose and salt.
In the meantime you will have prepared a mixture of bread crumbs seasoned with parsley, garlic, olives, capers, anchovies and a little oil.
Put a handful of this mixture into the center of the head of Endive, narrow it down and tie him up.
Cook in a pan with oil and a little water to moderate flame.
