Catalan salad alla parmigiana
Instructions
Clean thoroughly, Catalonia cut lengthwise, wash and sgocciolatela.
Bring to the boil salted water, join the Catalonia and cook for 20 minutes.
Drain, allow to cool, then cut into pieces and squeeze well.
You Brown the butter in a pan, add the Catalonia and flavour for a few minutes and rigirandola with a wooden spoon.
Add the grated nutmeg, salt and pepper.
Cook the Catalonia again for 10 minutes, it occasionally with a few tablespoons of broth to not let it dry too.
Add plenty of grated Parmesan and reshot all before turning off.
Pour the Catalonia on a preheated serving dish.
Garnish with Parmesan cheese.

- 1 large head of catalan salad
- 50 g of butter
- 2 tablespoons of grated parmesan cheese
- 1 pinch of nutmeg
- Broth
- Salt
- Pepper
- For garnishing:
- Parmesan cheese flakes
