Salad with cauliflower
Instructions
Clean cauliflower, florets and split it to boil in a pot of boiling salted water for 5 minutes.
Drain and cool raffreddatele under water.
Herring drained from oil and divide each fillet in half.
Roll them up and secure them with a stick rather than spoil the meat.
Cut red onion into slivers rather thin, wash the Endive salad and spezzettatela.
Prepare the sauce by mixing a cup of cream, 1 tablespoon of mustard, one of three oil vinegar, salt, pepper and chopped chives.
Arrange the Endive salad in a large Salad Bowl, sit above the tops of cauliflower and herring rolls.
Serve with the sauce and keep in a cool place until ready to serve.
Accompanying wines: Valle d'Aosta Bianco DOC, Trebbiano d'Abruzzo DOC Cirò Bianco DOC.
Ingredients and dosing for 4 persons
- 1 cauliflower
- 1 jar of herring fillets in olive oil
- 1 heart of frisee salad
- 1 red onion
- 1 cipollina
- 1 tablespoon of wine vinegar
- 1 tablespoon of mustard
- 1 glass of cream
- 3 tablespoons of olive oil
- Salt
- Pepper
