Baby squid salad and chicory
Instructions
Clean the squid, and then rinse and remove the sprigs.
Put them in a radial pattern in a round baking dish, with sprigs in the middle.
Sprinkle the pretzels, pepateli and sprinkle with thyme leaves.
Decorate with 50 g of white wine.
Cover with plastic wrap.
Passed in the microwave at max power for 3 and a half minutes; continue cooking for another 4 minutes on medium power.
Remove from the oven, then let them cool baby squid and cut into strips.
Peel the chicory, then cut into strips.
Peel peppers, tomato and dice respectively and cloves.
Arrange the squid in a dish, resting them on the prepared vegetables and topped with the tomato wedges.
Dressed with a sauce emulsifying obtained 6 spoonfuls of olive oil with 2 tablespoons of lemon juice, filtered, with half a clove of crushed garlic, a pinch of salt and pepper.

- 500 g of fresh calamari
- 150 g of tomato
- 100 g of cut chicory salad
- 70 g of yellow pepper
- 50 G = = dry white wine
- Thyme
- For the sauce:
- 6 tablespoons of olive oil extra virgin
- 2 tablespoons of lemon juice
- 1/2 clove of garlic
- 1 pinch of salt
- 1 pinch of pepper
