Cucumber salad (3)
Instructions
Wash, dry and cut into slices cucumbers.
Scottatele in boiling salted water, drain and put them under cold water.
Dry on a kitchen towel.
Cut the peeled pears into thin slices and drizzle with lemon juice.
Arrange on individual dishes a Crown of cucumber slices, a second round of pears, continue with the cucumber and ultimate with diced feta.
Sprinkle with thyme.
Dressed with a vinaigrette of emulsified oil a tablespoon of balsamic vinegar, salt and pepper.
Accompanying wines: Cortese DOC Colli Tortonesi, Galestro Tuscan IGT, Locorotondo DOC.

- 3 small cucumbers
- 2 pere
- 200 g of feta cheese
- 1 lemon
- Olive oil
- 1 tablespoon of balsamic vinegar
- Thyme
- Salt
- Pepper
