Sole salad
Instructions
Whisk egg yolk, mustard, salt and pepper to taste, lemon juice and 1 tablespoon oil.
Scald the strips of sole in boiling salted water and peppered.
Arrange on individual plates soncino and leaves of lettuce washed, sliced mushrooms and add the strips of sole.
Drizzle with sauce and serve warm.

- 2 sole fillet strips
- 2 mushrooms
- Soncino salad
- 1 heart of lettuce salad
- 1 hard-boiled egg yolk
- 1 tablespoon of hazelnut oil (or olive oil)
- 1 lemon
- Mustard
- Salt
- Pepper
