Instructions
Grilled sliced Eggplant and let cool.
Blend the Basil with garlic, chili peppers, pine nuts and enough oil to form a thick, not sauce.
Cut the tomatoes into wedges and put them in a salad bowl with the Eggplant cut into strips.
Season with salt and sprinkle with vinegar.
Pour the hot sauce and mix gently.

- 4 ripe tomatoes
- 2 medium aubergine
- 1 sprig of basil
- 20 g of toasted pine nuts
- 1 clove of garlic
- 2 pepperroncini piccanti
- Wine vinegar
- Olive oil
