Paupiettes of sole with prawns
Instructions
In a pan melt a knob of butter to saucepan, 2 minutes and the shrimp shelled and washed.
Sprinkle the pretzels and pepateli.
Drain them and when they are lukewarm adagiatene one over each fillet of sole.
Roll up and secure with a toothpick.
Melt the remaining butter in a pan, deponetevi, rolls, sprinkle the pretzels lightly cook them very little.
Cook for about 10 minutes.
Sprinkle a little wine, let it evaporate.
In a bowl mix half cup of cream with a few drops of lemon juice and chopped chives.
Place the rolls on a plate and cover them with sauce.
Accompanying wines: Chardonnay DOC Collio, Vernaccia Di San Gimignano DOCG, Alghero.

- 8 fillets sole
- 80 g of butter
- 8 prawns
- 1/2 cup of cream
- Dry white wine
- Chopped chives
- 1/2 lemon
- Salt
- Pepper
