Rabbit Cacciatore (Lepre Alla Cacciatora)
Instructions
Cut the pieces of rabbit you do Brown in hot casserole, when they are well browned, pour the white wine and allow to evaporate.
Meanwhile, in saucepan add 2 cloves of garlic, 1 sprig of Rosemary, Sage.
Stir so that everything take flavor.
Pour 2 ladles of broth, add salt and pepper and cook for about 1 hour minimum focus.
After 1 hour check the cooking: If the Hare is cooked, remove from the Pan and keep warm.
Pour the broth into a saucepan, add 2 anchovies previously pounded and diluted with a finger of vinegar, stir and simmer the sauce over low heat for about 3 minutes, then pour on Hare and serve.

- 1 hare
- 1/4 cup of dry white wine
- 2 ladles of broth
- 2 cloves of garlic
- Sage
- 1 sprig of rosemary

- 1 toe of wine vinegar
- 2 anchovies
