Sweet and Sour Rabbit (Lepre in Agrodolce)
Instructions
Put the cut into pieces in salted water for one night.
Take a large chopped onion, celery, carrot, ham, bacon and sauté with olive oil extra virgin and white wine.
During cooking, add a little broth.
When the Hare is almost cooked, add 2 teaspoons of sugar in 1/2 glass of red wine vinegar, chopped chocolate and raisins softened.
Finish cooking, making sure that the sauce does not stick.
Serve with warm polenta.
