Instructions
Boil the tongue, spellatela when is still warm, cut into slices.
In a large saucepan, heat a little oil and a knob of butter and lay the slices lightly flour.
Cook on one side and on the other side for 5 minutes, then add the pine nuts and the raisins first softened in water and then squeezed.
Let stand for a quarter of an hour over low heat.
Grate some chocolate, reach into or in a bowl with a tablespoon of flour, vinegar, sugar, a pinch of salt and dilute it with warm water.
Mix well and pour on the tongue.
If the fluid is low add warm water and boil.
Adjust the salt and serve.
