Cut eggplants into strips and put them first in the salt then in egg and flour again and then FRY them in oil.
Clean the pilchards and mix half with svuotandole onion, anchovies have been boned, salt, pepper and saffron diluted in water to make a sauce.
Cook for 10 minutes and then washed with water.
Fry the remaining sardines; Cook the pasta, dress with the sauce by adding fried sardines and eggplant.
