Cod au gratin
Instructions
Drain cod and cut it apart rather large.
Remove the skin and the thorns.
In a pan heat four tablespoons of olive oil, chopped onion, saucepan, heat the cloves of whole garlic.
Do Brown the cod on both sides, pour the milk, salted, flavoured with a pinch of pepper.
Cover the Pan and put it in a preheated oven at 180 degrees for about 2 hours or until the milk has been completely absorbed.
In a saucepan, melt over low heat, anchovy fillets with three tablespoons of olive oil and then pour the sauce on cod.
Sprinkle chopped parsley and stir gently.
Sprinkle grated cheese passed under the grill and when has formed a golden crust, remove and serve.
Accompanying wines: Breganze Vespaiolo Superiore DOC, Trebbiano d'Abruzzo DOC, Etna Bianco DOC.

- 800 g of cod
- 100 cl of milk
- 4 anchovy fillets
- 1 onion
- Garlic
- Parsley
- Grated cheese
- 7 tablespoons of olive oil
- Salt
- 1 pinch of pepper
