Teramo-Style Pork
Instructions
Keep in the bathroom for about twelve hours in cold water with a few tablespoons of vinegar.
Drain, cut them into pieces and put them in a casserole, preferably earthenware, with bay leaf, garlic, chilli and Rosemary; cover with water, bring to a boil, add salt and Cook, with the lid, over low heat, for about four hours.
Serve the meat with a bit of broth and bread.
At the end of cooking the broth must be very small and rather sticky.
If you want to taste this dish, let cool in broth that will become gelatin.
Ingredients and dosing for 4 persons
- 1000 g of fresh pork (ribs, pork rinds, nose)
- A few tablespoons of wine vinegar
- 2 leaves of laurel
- 2 cloves of garlic
- 1 chili without seeds
- 1 sprig rosemary of tied with colourless thread
- Salt
- Bread sliced
