Clean and peel the carrots, and cut.
Put to fire a casserole with the pulp of carrots, very little water, sugar, the juice and grated zest of the lemons.
Stirring occasionally, Cook on moderate heat until jam has reached the right consistency.
Pour hot, close tightly and invert the jars until it is completely cooled.
