Cod with potatoes and peppers
Instructions
In a saucepan heat half glass of olive oil and friggetevi the cod cut into chunks.
Peel tomatoes and potatoes and divide them into wedges, sliced chopped onion, peppers strips wide and cook in a pan with 3 tablespoons of olive oil.
In a large baking dish arrange layers alternating with cod and vegetables.
Do not add salt, pepper and add some peppercorns, thyme, bay leaf, parsley.
Squirt with a glass of wine, let it simmer for an hour.
At 10 minutes from the end discarded Laurel and parsley, add the olives.
Serve immediately.
Accompanying wines: Sauvignon Colli Orientali Del Friuli DOC, Marino "superior" DOC, Sauvignon DOC Castel Del Monte.

- 100 g of black olives
- 4 red tomatoes
- 300 g of potatoes
- 1 green pepper
- 1 red pepper
- Olive oil
- 1 onion
- Thyme
- Laurel
- Parsley
- Cayenne pepper
