Wash the quinces and cut them into pieces without discard anything.
Put them in a saucepan with the water and cook them until they become soft.
Pass the Mashers and placing them back in the pot with the lemon juice and sugar, stirring constantly to melt well.
Bake for about half an hour until the right consistency stirring.
Pour in boiling pots kept in hot and seal.
