Peel the pears, remove the core and cut into small cubes; put them to cook in a pan with a few tablespoons of water until obtaining a undercooked and jam with a few pieces.
Mount the 2 egg whites until foamy.
Pour the jam into bowls, garnish with the egg white and lightly browned in the oven already warm.
Served hot.
