Aubergines with cheese
Instructions
Put the sandwiches raffermi.
Remove the end to eggplant, wash them, cut them in half and cook in boiling salted water for 10 minutes, remove and let them dry.
Remove the Eggplant flesh with a spoon and taking care not to puncture the skin.
Chop finely with the stoned olives and fry the chopped obtained in a pan with 3 tablespoons of oil.
Add salt, pepper and add the drained and diced them sandwiches.
Remove from heat, add the beaten eggs, pecorino cheese, chopped parsley and stir thoroughly.
Fill the eggplants with the mixture, then place in a greased baking oil and cook in preheated oven at 200 degrees for 20 minutes.
Serve hot or warm.

- 4 eggplant
- 50 g of black olives
- 1 sprig of parsley
- 2 eggs
- 2 raffermi sandwiches
- 50 g of grated pecorino cheese
