Cut the Eggplant into small cubes, place them in a colander, salt and let stand at least 2 hours.
Put a little olive oil in a pan with the garlic, add the Eggplant and cook slowly, stirring occasionally.
Add salt and pepper.
Toward end of cooking add a beat of parsley.
