Eggplant with garlic and Mint
Instructions
The doses are for a jar of 1000 g.
wash eggplants, dry and sprinkle them thickly with coarse salt.
Let it sit for a couple of hours.
Then rinse dry and cook on hot grill.
Boil the vinegar with 30 cl water, mustard and sugar.
Sbollentatevi eggplant, drain and let them dry on a cloth.
Tamponatele well and let cool.
Roundtrip in a glass container alternating slices of garlic and mint leaves.
Cover of oil, close tightly and sterilized.

- 100 cl of wine vinegar
- 1 tablespoon of yellow mustard
- 100 g of sugar
- 1 head of garlic
- 20 leaves of mint
- Olive oil extra virgin
- Coarse salt
