Oriental eggplant
Instructions
Cut eggplants into slices, add salt and let them rest a bit.
Wash and dry them.
Beat the egg with salt and pepper, dip as flour them, sauté the slices in the egg and then in bread crumbs.
In a pan heat plenty of oil, friggetevi eggplants, drain on paper towels and keep warm in the oven until ready to serve.
Brought to the table along with a bowl of fresh yogurt flavored with mint leaves, if you like, it goes to the normal fried like a sauce.
