Instructions

Wash the eggplants, cut with the knife the upper part of the stem and the leaves, place them whole in a pot and cover with water.

Put the lid.

Boiling for 30 minutes or more.

Once cooked remove the meat from the Pan, place them in a container to cool, cut into long strips, seasoning them with: garlic, oregano, vinegar and salt.

Add, after shooting with 2 forks eggplants, olive oil and Mint.
