Eggplant Gratin (Melanzane Gratinate)
Instructions
Go to the tomato pulp mixer, combine the juice of a clove of garlic chopped basil, thyme, salt and crushed red pepper.
Place the eggplant in a baking dish, pour the tomato sauce, ricotta and Parmesan.
Cover with tin foil and put in oven at 180 degrees for 20 minutes.
Remove the paper and bake for 15 minutes.
Serve warm.

- 450 g of grilled aubergines
- 300 g of tomato pulp
- 1 clove of garlic
- Basil
- Thyme
- Salt
- Hot pepper
- 40 g of olive oil
- 200 g of ricotta
- 40 g of shredded parmesan cheese
