Grilled Aubergines (Melanzane Grigliate)
Instructions
Check the eggplant, wash, rinse carefully and dry with paper towels.
Subsequently, thickly along with the skin and stendetele on a countertop.
Then, salt them lightly, and place on each the smoked, anchovy and capers.
Finally, roll them up like the spring rolls, sprinkle them with a little olive oil and put them on the grill for about 5 minutes until the cheese is stringy.
Serve immediately.
