Rich cod
Instructions
Deprived of the cod skin already softened and cut into pieces.
In an earthenware casserole make Brown the garlic in 3 tablespoons oil, add the tomatoes into chunks and cook for 10 minutes.
Spread on bottom of casserole with a layer of salt cod, cover with strips of pepper and chunks of tomatoes, sprinkle with chopped onion and bay leaf, salt and pepper.
Continue with cod, tomatoes, peppers, chopped, salt and pepper and finish with another cod.
Add salt, pepper, a splash of olive oil and cook at very low heat, covered, for about 2 hours and a half.
