Instructions
Clean the fish, remove the plug.
In a saucepan heat 2 tablespoons of olive oil, add the anchovies, de-boned and chopped water, let them melt to form a sauce.
Put a little inside of the fish with a sprig of Rosemary, two basil leaves.
Ungetelo with a little olive oil, fold it back up.
Pour into a baking dish greased with oil remaining anchovy sauce, lay the fish, sprinkle with Rosemary, Basil and breadcrumbs, adjust salt and pepper.
Cook in the oven at 200 degrees for half an hour.
Serve surrounded with pitted olives.
Accompanying wines: Trentino Pinot Bianco DOC, Orvieto DOC, Etna Bianco DOC.

- 1 piece of cod (1000 g pieces)
- 100 g of anchovies
- 1 sprig of rosemary
- 2 leaves basil
- Olive oil
- Breadcrumbs
- 100 g of pitted black olives
- Salt
- Pepper
