Wet'd infern
Instructions
Thinly slice the garlic cloves after you delete the internal green shoot, especially when garlic is no longer young.
Water and de-boned anchovies and put them in dianèt (shard from flame) together with the garlic: gently fry them with olive oil until garlic imbiondimento.
At this point add the tomatoes peeled and coarsely broken and chili.
Cook fresh focus until right consistency of salsa, for 30 or 40 minutes.
Red and pizzicante as it is because of the tomatoes and chilies, salsa has the name it deserves: bagna'd infern.
Pour warm slice of polenta; Sprinkle with a pinch of chopped parsley and serve.

- 12 cloves of garlic
- 12 salted anchovies
- 4 fresh tomatoes
- 1 sprig of parsley
- Olive oil
- Hot pepper
