Instructions
Peel the garlic cloves, put them in milk and boil.
Cook for 1 hour.
Discard the milk and crush the garlic.
Add to oil in an earthenware bowl, add the anchovies washed and de-boned.
Heat until these melt up to assume the appearance of a smooth cream.
Bring on the table with the cooker and keep warm.
Typically the vegetables, preferably raw.

- 3 heads of garlic
- 50 cl of olive oil extra virgin
- 200 g of salted anchovies
- 100 cl of milk
- 2 cardi
- 2 sweet yellow peppers
- 1 cabbage
- 6 topinambur
- 2 beets
- 6 baked onions
- 6 boiled potatoes
- 6 carrots
- 1 steamed cauliflower
