Mezze penne gratin
Instructions
Heat the oven to 200 degrees.
Cook the pasta in boiling salted water.
Chop the bacon and fry it in a pan with oil, add the spring onions into thin slices, add salt and cook on low heat and cover closed for 10 minutes, stirring occasionally.
Drain the pasta al dente, dress with the sauce, put it in a baking dish greased with butter and sprinkled with breadcrumbs, cover it with whipped cream mixed with Parmesan and egg yolks and cook in the oven for 20 minutes.
Remove from oven and serve.

- 350 g of type mezze penne pasta
- 2 bunches of fresh onions
- 100 g of speck
- 20 cl of cream
- 2 egg yolks
- 4 tablespoons of parmigiano
- 3 tablespoons of olive oil
- 20 g of butter
- 2 tablespoons of breadcrumbs
- Salt
