Instructions
Turn the oven on 120-130 degrees.
Make the fountain with flour and put all the other ingredients: potato starch, sugar, softened butter, egg yolks and 5 tablespoons of wine, and a grated orange zest.
Mix well and work along the dough, until it is smooth and firm and not cling to the fingers, then pick it up at the ball, infarinarla and let it rest for 15 minutes.
Roll out with a rolling pin to approximately 3 mm and make cookies with a round or stencil with a glass.
Place as on a buttered and floured, then pennellarli with egg, beaten lightly, and with the prongs of a fork lightly rigarli.
Insert the plate into the oven and supervise the cooking, which will happen quickly enough: the cookies should be very dry and crumbly.
Gently remove them from the plate, let them cool and store them in tins or glass jars to seal.
