Instructions
To prepare the spleen from the butcher sliced and peeled.
In a frying pan to heat the oil with the garlic and anchovy desalted and finely chopped; season with salt and pepper and Sage leaves.
When the oil is hot, fry the spleen and when cooked, sprinkle with vinegar doing evaporate high heat.
Serve immediately.

- 1 anchovy
- 1 clove of garlic
- Olive oil extra virgin
- 1/2 cup of wine vinegar
- Salt
