Tuscan spelt soup
Instructions
Leave the beans in water overnight, then cook them in water and puree through a sieve.
Fry the onion in the oil and when it starts to Brown, add the tomatoes, spelt, the beans and broth.
Cook for 40 minutes, seasoning with salt and pepper.
Served sprinkling with a little olive oil.
