Barley Soup (Minestra di Orzo)
Instructions
Wash the barley and cook for 2 hours in the broth.
Saute chopped onion, parsley, Basil and Rosemary in oil and add to soup with potatoes into chunks and sliced carrots.
Join the bone, pepper, salt and cook for 1 hour.
Serve with Parmesan cheese.
Ingredients and dosing for 4 persons
- 200 g of pearl barley already soaked
- 1 onion
- 1 potato
- 1 carrot
- 1 pinch of parsley and basil
- 1 sprig of rosemary
- 1 ham bone
- 200 cl of light meat broth (or bouillon broth)
- 50 g of grated parmesan cheese
- 3 tablespoons of olive oil
- Pepper
- Salt
