Potato and tomato soup
Instructions
Peel and dice the potatoes.
Cut the onion into thin slices and ham in small pieces.
Put the onion in a saucepan with a little water on low heat and let them soften.
After 45 minutes, add potatoes, tomatoes, ham, parsley and chopped Basil.
Cook until the potatoes are not quite fulfilled, adding, when necessary, a bit of boiling water.
The soup should be thick and creamy.

- 140 g of potatoes
- 100 g of carrots
- 40 g of peeled tomatoes
- Onions
- Parsley
- Basil leaves
- 2 slices of lean ham
- Olive oil extra virgin
