Instructions
Boil and drain the chard.
When are cold strizzatele to remove all water and pass through a machine.
Collect the proceeds into a bowl and mix with the cheese, eggs, a pinch of salt, then dilute with a ladle of broth cold.
In a saucepan, bring to a boil the rest of the broth and let drop the mixture by mixing with a whisk.
Simmer gently for 5 minutes and pour into soup tureen.
Serve with grated cheese.

- 400 g of beets
- 40 g of grated cheese
- 3 eggs
- 150 cl of broth
- 1 pinch of salt
