Ticino minestrone
Instructions
Saute in a knob of butter 1 onion and 1 sprig of parsley.
Combine chopped Bacon 20 g, 50 g of prosciutto rinds boiled and cut into small pieces and 1 tablespoon oil.
Add 200 g of fresh beans, 3 stalks of celery, 2 carrots, 2 tomatoes, 300 g cabbage coarsely chopped and all 1 whole peeled potato.
Sprinkle with 1 glass of wine, salt, add 100 cl of beef broth and cook for an hour.
Crush the potatoes, then add 300 g of boiled rice, sprinkle with Parmesan and serve.

- Grated parmesan cheese
