Mini supplì of rice with mozzarella
Instructions
Boil the rice and, halfway through the cooking, drain and reach into or in a large bowl with the mozzarella, cut into small pieces, finely chopped cooked ham and two egg yolks.
Mix well.
Add the grated cheese and knead this dough so that it is very hard and compact.
Oblong quenelle make no bigger than a walnut, flour them, put them in beaten egg slightly salted and peppered, then in the breadcrumbs.
When all supplì are ready friggetene a little at a time in hot oil.
Collect it when they are a nice golden color, carefully dry them on absorbent paper and serve hot.
