Chocolate mousse
Instructions
Melt in a Bain-Marie (but I confess I do it in the microwave and we use a minute or so) chocolate and butter.
Allow to cool and add one at a time, always stirring, the eight egg yolks.
Aside from snow firmly mount the nine whites and incorporate them slowly to the mixture with movements from top to bottom to avoid unmount user.
Put the whole thing in the fridge for a whole night (maybe just 2 or 3 hours too, but I usually do it the day before).
