Nastrini with salmon
Instructions
Saute the shallots with a little oil extra virgin olive oil and a knob of butter.
Then add the salmon into chunks and after a minute add a finger of white wine.
Meanwhile, in saucepan with salted water to a boil, put the potatoes into chunks and after a couple of minutes down the ribbons.
While the pasta is cooking sprinkle the salmon with fresh chopped parsley and freshly ground black pepper.
Drain the pasta and potatoes, pour in a pan with salmon, add a tbsp of water the dough, let stand for a minute and bring to the table.

- 250 g of type pasta ribbons
- 150 g of smoked salmon
- 150 g of new potatoes
- Fresh parsley
- 1 shallot
- 1 walnut butter
- 1 finger of dry white wine
- Olive oil extra virgin
- Salt
- Peppercorns
