Instructions

Rattle off the olives and put them aside.

Saute 1 clove of garlic in a pan with a little oil extra virgin olive oil, add the meat and cook for 5 minutes.

Chop the mortadella and add it to the mixture.

Add salt, pepper and chopped chives.

Finally, add some breadcrumbs to thicken the mixture.

Stuff the olives with the mixture prepared well, careful not to break them.

Beat the eggs and add 1 pinch of salt and a sprinkling of pepper.

Wipe gently with the stuffed olives in egg and finally in breadcrumbs, causing it to stick well.

Fry the olives in olive oil boiling extra virgin until golden brown.

To make the batter for these appetizers even more crisp, you can repeat the process twice.
