Beat the eggs with salt, pepper and a tablespoon of cold water.
Chop some parsley, chop six leaves of basil, some blades of chives and two mint leaves.
Mix all the herbs and add eggs.
In a pan heat to moderate fire left a knob of butter with one tablespoon of olive oil, pour the mixture and bake the omelet so that remains dry and soft.
Let it slide on a hot serving dish.
Serve.
