Instructions

Prepare the tuna mousse and salsa verde, which will be used for the filling: place the softened butter in a bowl and knock it in cream with a wooden spoon, then add the tuna, well drained and kept oil, a teaspoon of chopped capers and anchovy fillet, drained them from their liquid preserves and finely chopped.

Mix until mixture is smooth, homogeneous and fluffy.

Prepared mousse flavored with the juice of half a lemon and put it aside.

For the salsa verde, finely chop the parsley with a hard-boiled egg yolk, two fillets of anchovies, a gherkin and a teaspoon of capers, rinsed under lukewarm water.

Place the mixture in a bowl and mix in the crumb of a sandwich, softened and squeezed with vinegar, a pinch of salt and a cup of oil (minus two tablespoons).

Stir with a wooden spoon until you have a smooth sauce, then put it aside.

Cook the burgers in a pan with two tablespoons of olive oil, moderate heat for 10 minutes, making sure to turn a few times and season with salt and a pepper minced.

Halved the four sandwiches and stuffed the first with lettuce leaves, washed and dried, a tomato and a boiled egg, sliced, both a burger and a spoonful of salsa verde.

Fill the second bun with slices of bacon, a hamburger and radishes, cut into thin slices.

The third sandwich stuffed with a burger and a layer of sliced raw onions, and the last with a tomato cut into slices, a Burger, a tablespoon of tuna mousse and a gherkin cut.

Bring on the table serving sandwiches apart from what remains of the Green Sauce and tuna mousse.
