Panzanella of onions and anchovies
Instructions
Soak the slices in water crackers or hardtack for at least half an hour.
Remove the backbone to anchovies (4 per person) and make them into small pieces.
Cut onions into thin slices after they leave half an hour in cold water to dampen the smell.
In a salad bowl have wrung out after bread, onion, anchovy pieces and a pinch of chopped basil leaves.
Season with plenty of oil and pepper to taste.
Check the salt, but it should not be necessary.
