Passatelli (2)
Instructions
Mix the bread with Parmesan, lemon zest (yellow part only), beaten eggs and a rub of nutmeg.
Season with salt and pepper and work everything very well in order to have a homogeneous mixture that will be pretty hard.
Using the special tool, form CA 2 cm long passatelli and drop them in the broth slightly boil.
Also add the oyster liquid and cook for 5 minutes.
Ingredients and dosing for 4 persons
- 150 g of parmigiano-reggiano
- 100 g of breadcrumbs
- 2 fresh eggs
- 1 rub of nutmeg
- Little of grated lemon rind
- Salt
- Pepper
