Instructions
Mix Parmesan cheese and bread crumbs, then add the eggs, lemon zest and nutmeg and work well all ingredients until dough is pretty consistent.
Let marry 1 hour.
Pass the dough into iron to create the passatelli (small cylinders) and let them fall into the boiling broth.
The passatelli, once cooked, will rise to the surface: serve hot.
Ingredients and dosing for 4 persons
- 6 eggs
- 300 g of grated parmesan cheese
- 300 g of breadcrumbs
- 1 pinch of nutmeg
- Zest of lemon
- Chicken broth (or broth of capon)
